Almost every aspect of Bitcoin uses a cryptographic technique called hashing.

Hashing is the process through which text, numbers and any kind of data is turned into a single large number.

Bitcoin blocks are hashed and then compared to a desired pattern. If this pattern does match, the block has been solved. It's a bit(!) more complicated than that, but the purpose of this introduction is to explain hashrates.

Hashing rate, hashrate in short, is the number of hashes per second that any given system, or network of systems, is able to process.

To solve a Bitcoin block an astronomical amount of hashes have to be tested against a given pattern. The more hashes are tested per second, the bigger the hashrate.

Total network hashrate is the sum of all the hashes per second being tested by all miners in the network. Bitcoin difficulty is adjusted to this number in order to maintain an average of one block solved every 10 minutes.

Different mining machines or GPU cards are able to produce different hashrates for certain encryption algorithms. SHA256 hashrate (used in Bitcoin and other coins) is usually much higher than other slower algorithms such as Keccak or scrypt. Comparisons must therefore only be performed among equivalent algorithms.
